Healthy Chicken & Veg Sweet n Sour Noodles

This is one of those recipes that is so simple, yet delicious. If you don't have much time then this is a winner.

You can't go wrong when it's a case of chucking everything into a wok, stir frying it together, making your sauce and adding the noodles at the end ...VOILA you have a great hearty meal.

What you'll need

Meat

1. 2 medium size chicken breast diced into cubes

Noodles -Ready to Wok Noodles- Wholegrain is best

Veg

1. red pepper

2. yellow pepper

4. baby corn

5. red onion

6. mushrooms

7. large carrot

Sauce

1. tomato sauce

2. 2 tablespoons white rice vinegar or white vinegar

3. 2 tablespoons low sodium soy sauce

4. 1 teaspoon sesame sauce

5. 2 squirts or 2 tablespoons runny honey

6. 1 half tin pineapple chunks in juice

7. Lemon Juice (optional)

7. Optional- 1 heaped tablespoon Cornflour- to thicken

Method

Start by peeling your carrot and chopping into small chunks. Chop your peppers, red onion, mushrooms and baby corn into rough pieces- you can leave the baby corn whole if you prefer bigger pieces. Stir fry it all together in a wok, or large frying pan. To keep it extra healthy I use coconut oil, however a small amount of olive oil is okay too.

Put vegetables to one side, in a different pan or wok fry the cubes of chicken again I use two squirts of coconut oil for this. Fry the chicken until it is cooked through and browned off.

While cooking the chicken I start my sauce in a small saucepan. In the saucepan put in four big squirts of tomato sauce, add half tin pineapple chunks along with juice, mix it all together. Now turn on the heat to medium, whilst it heats up add the sesame sauce, soy sauce, white rice vinegar and runny honey. Taste the sauce and if you want to add lemon juice to give it a kick then go ahead- this is optional. Make sure you keep stirring it all together. If the sauce thickens up enough at this point do not add the cornflour. However I always add one heaped tablespoon just to give it a slightly thicker consistency as I prefer it that way.

Next add the cooked chicken to the wok full of the stir fried veg, then pour the sauce over the meat and veg. Give it a good stir whilst turning the heat back on to medium.

Finally add the noodles. I recommend buying a ready pack which can just be thrown into the stir fry as it's nice and quick. Give everything a big stir and leave on the heat for a further two minutes.
